The Empire Hotel is my recommendation for blues and even ska. On 103a Parramatta Rd, Annadale, admission is from 5 to 15 A$ on Fridays and Saturdays. They have great live performances from Tuesday to Sunday, a great sound system and good service. Check out www.sydneyblues.com for the upcoming concerts.
