First of all, go to 110 George St, The Rocks and find inside Cadman's Cottage the Information Centre, where you can find out what is included in the park and what you can do. I know you can go on tours that start from Cadman's Cottage (and that's also where you can book), like a tour of Fort Denison or Goat Island, a former shipyard.
